Here is one of our
favorite ways to use leftover holiday turkey (cooked chicken can also be used
in place of the turkey).
Green Chili
Enchiladas
Ingredients
- 8-10 corn tortillas, softened
- 2 cups chopped, cooked turkey
- 1 10 oz. can favorite green chili enchilada sauce
- 1 10 oz. can cream of chicken soup
- ½ tsp. cumin
- 2 tbsp. dried minced onion
- ½ tsp. garlic powder
- 2 Tbsp. sour cream
- 3 cups shredded Monterrey jack cheese or Colby-jack cheese

Preheat oven to 350 degrees.

In a saucepan mix turkey, enchilada sauce, soup, seasonings, and sour cream.
Heat mixture to a simmer.

Dip tortillas into simmering liquid one at a time. Place in greased 9x13 Pyrex or CorningWare baking dish making
sure at least a tablespoon of the chopped turkey is in each one, add a
tablespoon of grated cheese and roll up placing seam side down.

Repeat until all tortillas are filled. Pour remaining sauce over all. Cover
with remaining grated cheese.

Bake for 20 minutes or until cheese is melted and edges are bubbly.
