Here is a recipe supplied by one
of our customers. It sounds delicious.
Lamb Yuvetsi Kritharaki
Ingredients
- Lamb shanks cut into large cubes
- Diced onions
- Diced garlic
- Crushed tomatoes
- Oregano to taste
- Salt to taste
- Pepper to taste
- 1 Cinnamon stick
- Orzo (Kritharaki)
Brown lamb
shanks in a skillet with olive oil over medium heat. Remove lamb and fill pan with diced onions
and a few pieces of diced garlic and cook until soft, but not brown.
Soak clay pot
in water for about 15 minutes and then add browned lamb, onions, garlic plus
enough crushed tomatoes to cover the lamb.
Add an equal amount of water plus oregano, salt, pepper and a cinnamon
stick. Now add the uncooked orzo
(kritharaki) into the pot and mix it all up.
Cover the
pot, place in a cold oven, and raise the temperature to 425 degrees and cook
for approximately 2 hours. Remove from
the oven and keep covered while allowing to rest for about 20 minutes. Now you are ready to serve.
